How do I know upfront whether the development of a certain technology (e.g. tomato processing plant) will require also stage 2 and/or stage 3 of research?
Note that in any case, the "Research" overview of the Lab would predict: "Expected number of working hypotheses: 8" - even though no hypothesis testing would be required in the end.
 

some examples:
+ Tech Lv.3   | Tomato Processing:  stages 1+2 required
+ Tech Lv.3   | Solar Power Plant :   stage  1
+ Tech Lv.7   | Toothpaste Plant  :   stages 1+2+3
+ Tech Lv.7   | Electronic Compon.: stage  1

Re. requiring stage 3 in research, the Wiki says:
 
"Technologies of level 5 (and higher) will require a factory attached to the laboratory. " - which does not hold true in my experience.

Perhaps someone can elaborate on this further, but from experience, the stage requirements depends on the maximum researched technology level in the whole realm. For example, if you are trying to research level 5 of Aircraft Engine Plant when the highest technology level researched in the whole realm is 7, then you might need to go through all stages. In contrast, suppose you are trying to research level 5 of Chemical Factory when the highest technology level researched in the whole realm is 45, then it's possible that you won't need to go through all stages.

indeed, you might fluke the discovery of the entire technology after stage 1 already.
 
If it does go to stage 3, however, then you'll definitely need a factory of sufficient size to test your hypothesis as of tech level 5.

Let's amend my example from above - seems to fit indeed:
