Hey guys,
Does anybody have some sort of table regarding the optimum number of departments/products that you can have depending on the store size? (in order to achieve a high efficiency)
Something like:
100 sqm store - 1 department, 2 products
500 sqm store - 1 department, 5 products
1000 sqm store - 2 deprtments......
.
.
.
Or there's no link between these two?

More products in one department - better. Number of products in one department doesn't effect sales of these products a lot.
 
Optimum numbers are like in your example:
100-1000m: 1 department
10k m: 2 departments
100k m: 3 departments

I think the number of products sold might also influence the efficiency of the store. I had 5 products (all in one department) in a 500 sqm store which had a low efficiency and just by changing the size to 1000 the efficiency went up to high.

First of all - I like your question.
I think store optimization in general wasn't discussed enough and specifically wasn't your question.
I suppose I'll get into the subject when I have some time.
 
I'm not sure about this one, but I think it is better to be in less than 50% of store capacity to have higher service level.
To increase your service level you can increase employees salary. It will increase their qualification but you shouldn't push the limit as VLLord and NoGlues showed in their charts, so you don't overload your top manager.
In addition, as I discussed with Fractal some categories are more "sellers demanding" -
you can much easily manage with 1000 of each clothe's type units rather than electronics or moto products.
 
The temptation to have more than 4 departments(even in 100K stores),  ussually cause harmfull consequences for player who don't have sufficient comerce level.
As the sales increase it will demand higher orders volume and therefore more sellers.
In addition, the ads will bring  more customers as time pass by, and they will demand some service too -> even more workers.
So, you should try limit yourself to 10k stores (unless you have about 11-12 level in comerce and even this in case you don't have too many stores) and to 4-5 deps at most (not 8Well ).

I am a personal fan of keeping my stores one department. I notice considerable sales volume drops in products across the board when a store has one department v.s. even as little as two.
 
Further, it has been my experience that the more departments you have the higher your service level needs be. This can cause problems if you are attempting to operate several-large-multi-department stores.
 
In other words, I keep food in one store, jewelry in a second, clothing in a third, furniture in a fourth, and so on.

Think more departements will affect your maximum sales.
Most players can't cope with these numbers of supply anyway so more departements are possible till you can produce your own supplies by the miljons ;) Till than i think you can cope with 3 or 4 departements at 1o or 100k stores

I find it hard to keep Elite level in large 100.000m² stores with 3 departments so I have reduced departments to max 2 in most stores and added more specialized stores.
