I am going on a vacation and will have limited to no computer access.  Is there a vacation mode to "pause" the game while I am gone.  My business is precarious enough with me involved, I am afraid I will have to reset if I leave for a week (which at this point might not be a bad thing)

well, if your supplies are stable and you are running a profit, it should be ok for a few days...
 
You could also consider sending all your staff on holiday and stop all supplies. Calculate if you have enough liquidity to pay for your fixed costs.
 
You could sell companies with high fixed costs.
